"FLEMISH ROULETTE"
ME, THE MOMS AND THE WIFEY WERE OUT ON AN ALMOST BOXING DAY ADVENTURE THIS WEEKEND. WE STARTED THINGS OFF AT "JAM" IN LOGAN SQUARE. SOFT SCRAMBLED EGG AND CAVIAR.? YES, PLEASE.


BALLIN' OUT ASIDE, WE END UP AT LONGMAN WITH OUR GOOD FRIEND CHAD. CHAD GOES ON TO LAY THE FOLLOWING GEM ON US. WE ENDED UP NAMING IT "FLEMISH ROULETTE," EARLIER TODAY.


GET YOUR MIND RIGHT:
1 OZ. BITTER TRUTH E.X.R
1/2 OZ. CYNAR
3/4 OZ. ROSEMARY SIMPLE SYRUP
"MONK'S" FLEMISH SOUR ALE, TO FINISH


DO IT BIG:
POUR UP THE E.X.R, CYNAR AND ROSEMARY SIMPLE SYRUP IN A COLLINS GLASS WITH A FEW NICE CUBES. GIVE THE DRINK A GOOD STIR AND TOP IT WITH THE FLEMISH SOUR ALE. 


LESS ADVANCED STUDENTS MAY REQUIRE DIRECTIONS FOR THE SYRUP...


BASIC MATH:
COMBINE EQUAL PARTS COLD, FILTERED WATER AND RAW CANE SUGAR. BRING THE MIXTURE TO THE BOIL AND REMOVE FROM THE HEAT. THROW IN A FEW ROSEMARY SPRIGS, COVER AND ALLOW THE HERBS AND SYRUP TO GET ACQUAINTED.


ONCE THE SYRUP IS COOL, DISCARD THE ROSEMARY, FIND AN APPROPRIATE CONTAINER AND ADD THE WORK TO THE PANTRY.
